Mexican Style Fish

2 cups chopped tomatoes
1/4 cup chopped green onions
3 Tbsp. fresh lime juice
2 Tbsp. chopped green chiles
1 Tbsp. chopped fresh parsley
1/8 - 1/4 tsp. garlic salt
Dash pepper
4 red snapper fillets

Combine all ingredients except fish in large skillet. Stir well. Bring to a boil, reduce heat and simmer, uncovered, for 10 minutes. Add fish, cover and cook an additional 11 minutes or until fish flakes. Place fish on a serving platter and spoon tomato mix on top, using a slotted spoon.

Lemon Pepper Chicken & Veggies

Take a casserole dish and spread out chicken breasts! It needs to cover the entire bottom of dish! Next sprinkle with lemon pepper...as much as you want! Then you are going to take raw veggies like... brocolli, red potatoes, cauliflour, carrots, squash and whatever else you want and your going to layer each veggie with lemon pepper in between.

Don't overfill...... then you are going to put aluminum foil over it and stick in the oven for about 30 minutes or until done at 350 degrees!

Everything is going to be steamed! And it will have a great flavor!

Tater Tot Casserole<br>1 lb ground beef (browned and seasoned to taste)<br>Tater tots (enough to layer the bottom of a 9x13 baking dish)1 can crm of mush<br>1 can crm of chick<br>1 can corn<br>1 can green beans<br>Layer the tater tots on the bottom of the pan, top with layer of beef, spread on the soups (undiluted), then spread on the veggies, cover with foil and bake @ 350 for 1 hour. Take out of the oven and top with shredded cheese and you are good to go. We never have leftovers with this meal. I like to use garlic salt when I season the beef.

Green Bean Casserole:

3 cans cut green beans, strained
1 can cream of chicken soup
4 oz velveeta
Large can French's fried onions

Heat oven to 350 degrees. Melt velveeta in a pan with the cream of chicken soup. Warm green beans in the microwave for 2 minutes. Pour melted cheese & soup over green beans, and heat in the oven for 10 minutes. Remove and pour fried onions on the top. Heat for an additional 5 minutes and serve hot!

For baked or grilled chicken, pork or fish:

Marinate in a balsamic vinagrette or vinagrette dressing for at least 30 minutes. You can also use italian dressing. After cooking, pour a little more dressing on top. It adds a great flavor!

EASY minestrone soup! Take 2 cans of Progresso Vegetarian Minestrone soup and add a cup of frozen hashbrowns nad some frozen meatballs. Cook for 10 minutes on medium and simmer on low until ready to serve. Top with freshly grated parmesean! Enjoy!

Banana Split Cheesecake!

Crust:
2 1/2 cups of Crushed Graham Crackers
1/4 C melted butter

Mix together and press to the bottom of a 13x9 casserole dish.

Filling:
8 oz Cream Cheese
2 eggs
1 C Powdered Sugar
1 tsp Vanilla
1 Stick of Butter

Spread evenly on top of graham crackers

Layer on top of filling evenly sliced bananas. On top of the bananas put drained crushed pineapple. Sliced Strawberries go on next followed by cool whip spread on top! Now if you want to get fun! You can make a decoration with the fruit on top of the whip cream surface! For the 4th of July I do a flag! Oh! Don't forget to let it chill for about an hour before serving!

Spanish rice and Chicken.. 1 Box of rice a roni Spanish rice 3 to 4oz of any meat.. ( I usually use shrimp or chicken) 1 Can of petite diced tomotoes (only use half a can.. you can use more if you like a lot of tomotoes) Fix rice by directions on box, once you are bringing all boxed ingredients to a boil, add your meat.. Let simmer 15 to 20 min. (Rice a roni box indicated exactly how long) Very good and easy!! My husband is picky and he loves this!

This is a favorite in our house...so easy!!! Our roommate calls this "chicken in the foil" LOL All you need is chicken breasts, stuffing mix, foil, shredded cheese, broccoli, and salad dressing. I start by mixing the stuff mix with whatever measurement of water the stuffing box says to use. Then I tear off sheets of foil and spray it with cooking spray. Next, put a spoonful or so of stuffing on the center of the foil and put a piece of chicken on top of the stuffing. Then you put some broccoli and shredded cheese, and finally drizzle some italian dressing or our favorite to use is sundried tomato vinigrette over top and close up the foil, leaving room for it to breath. cook at 350 for 25-35 mins...we love this and it is low mainenance..gives me time to play with emma or relax for a few minutes...

STUFFED PEPPER CASSEROLE (This is a really good money saver if you're kids don't like peppers.)

You'll need:
1 1/2 lbs ground meat (any will do)
3/4 cup of cooked rice
2 large green peppers
1 onion diced
1-1 1/2 cups spaghetti sauce
bread crumbs
salt, pepper and garlic powder


brown meat and drain off fat
season with salt, pepper and garlic powder (as little or much as you'd like)
cut peppers into 1 inch strips
combine meat, rice, onions, peppers and sauce
place in a casserole dish and sprinkle bread crubs on top
cover and bake for 45 minutes at 350 degrees
uncover and bake for 15 more minutes or until crust is golden brown.
