All these can be frozen. Thaw in the fridge the day before and then bake. I make up meals in disposable foil containers with

Chicken Dijon and Pasta
3 lbs. chicken (4 breasts), cooked and chopped
1/4 cup Dijon mustard
1/3 cup creamy Italian salad dressing
1 can cream of mushroom soup
3 cups uncooked rotini, cooked and drained
1 1/3 cups Frenches onions
1 diced Roma tomato
2 tablespoons minced parsley
Combine all except 2/3 cup of onions. Bake for 30 minutes at 350. Top with remaining onions and bake until browned.

Chicken and Wild Rice Casserole
1 pkg. Uncle Ben's wild rice
15 oz. can chicken broth
1 can cream of celery
1 small jar pimentos
1/2 cup mayo
1/4 cup chopped onion
2 cups cooked, diced chicken
grated cheese
1 pkg. sliced almonds
Cook rice in chicken broth according to package directions. Add soup, pimento, mayo, onions and chicken. Mix (freeze at
this step) and bake 30 minutes at 350. Remove from oven and sprinkle with cheese and almonds. Return to oven to melt cheese.

Creamy Herb Pasta Bake
1 T oil
2-3 chicken breasts, diced
8 oz. fettuccine, cooked to pkg. directions
26 oz. spaghetti sauce
1 can diced tomatoes
1 can cream of chicken and herb soup
1 c. shredded mozzarella cheese
1/3 c. Parmesan cheese
1/3 c. Italian bread crumbs
Preheat oven to 375. Heat oil in skillet. Add diced chicken. Cook and toss until cooked through (10 min.) Drain and set
aside. Rinse cooked pasta in cold water. Mix sauce, tomatoes, and soup. Add chicken and pasta. Spread into lightly greased
2 qt. baking dish. Sprinkle mozzarella over top. Toss together Parmesan and bread crumbs. Sprinkle on top. Bake 35-45 minutes
till bubbly.

Chicken Lasagna Alfredo
10 uncooked lasagna noodles
1 jar white Alfredo pasta sauce
1/4 c. milk
1 1/2 t oregano
3 c. chopped cooked chicken
1 can artichoke hearts in water, drained and chopped
1/2 c. chopped red bell pepper
4 oz. cottage cheese
1/4 c. finely chopped onion
2 c. fresh spinach
1 pressed garlic clove
3 c. shredded mozzarella cheese
Preheat oven to 375. Cook noodles with shortest cooking time on pkg., drain and rinse with cold water. Combine Alfredo,
milk, and oregano. Combine chicken, artichokes, pepper, and onion. Press in garlic. Add cheeses and mix well. To assemble
lasagna:
2/3 c. sauce in bottom of 9x13 pan
1/2 noodles
1/2 spinach leaves
1/2 chicken mixture
1/2 remaining sauce
Repeat.
Cover with foil. Bake 45 minutes. Remove foil and bake 10-15 minutes or until bubbly. Let stand for 15 minutes before
cutting.

Chicken and Macaroni Casserole
1 7 oz. box macaroni
2 c. cooked diced chicken
2 c. milk
1 small onion, diced
1/2 lb. Velveeta, cubed
2 cans cream of mushroom soup
2 c. potato chip crumbs
Mix and refrigerate overnight. Sit out for 1 hour. Top with chips. Bake at 350 till brown and bubbly.

Yum-a-setta
2 lb. hamburger
1 1/4 T brown sugar
1/4 c. onion, chopped
1 can tomato soup
2 cans cream of chicken soup
16 oz. egg noodles
8 oz. Velveeta, cubed
Soda crackers, crumbled and moistened with margarine
Cook the noodles and drain. Brown hamburger. Add salt and pepper (to taste), brown sugar, and onion to hamburger. Drain
off juices. Add soups, noodles, and cheese to hamburger. Place in casserole. Cover with crackers. Bake 350 for 40 minutes.

Crunchy Beef Casserole
2 c. cooked elbow macaroni
1 lb. ground beef, cooked and drained
1 can cream of mushroom soup
1/2 can diced tomatoes
1 1/2 c. shredded cheddar, divided
1/2 t. salt
2 c. French's onions
Combine all but 1 c. onions and 1/2 c. cheese. Bake covered at 350 for 45 minutes. Uncover and add onions and cheese to
top. Bake till browned.

Baked Chop Suey
1 lb. browned hamburger
1 chopped onion
1 c. chopped celery
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. water
1 c. uncooked instant rice
2 T soy sauce
Chow mien noodles
Preheat oven to 350. Mix soups with water. Add rice, veggies, and soy sauce. Add meat. Pour into greased 9x13 pan. Bake
1 hour covered. Cover with chow mien. Bake 15 minutes more.

Lasagna
Noodles:
10 lasagna noodles
1/2 t. salt
few drops of olive oil
Cook according to pkg. directions
Filling:
2 eggs
3 c. cottage cheese
1/2 c. Parmesan cheese
2 T parsley flakes
1 t. salt
1/2 t. pepper
Mix all.
Sauce:
Extra large jar of spaghetti sauce
1/2 lb. hamburger
1/2 lb. Italian sausage
Brown meat and drain. Mix with sauce.
Cheese: 1 lb. shredded mozzarella
Layer in 9x13 pan:
1/3 noodles
1/3 filling
1/3 mozzarella
1/3 sauce
Repeat twice.
Bake covered at 375 for 45 minutes. Remove cover and bake 15 minutes more or until bubbly. Let stand before cutting.

Hamburger and Hash brown Casserole
2 lb. ground beef
1/2 t. salt
1/ t. pepper
32. oz thawed hashbrowns
2 cans cream of mushroom soup
1 chopped onion
4 c. shredded cheddar
1 small can Frenches onions
Preheat oven to 350. Brown beef, onion, salt and pepper. Add potatoes, soup, and cheese. Pour into greased 9x13 pan. Bake
30 minutes. Top with Frenches and bake until browned.

Baked Spaghetti
1 onion, chopped
16 oz. spaghetti
1 lb. ground beef
3 c. shredded mozzarella cheese
extra large jar of spaghetti sauce
1 small can mushrooms (opt.)
Cook spaghetti, drain, and rinse with cold water.
Brown beef with onion.
Combine spaghetti, sauce, meat, and mushrooms.
Layer in 9x13 pan:
1/2 meat mix
1/2 of cheese
Repeat.
Bake 350 for about an hour.

Tator Tot Casserole
1 lb. ground beef
1 onion
1 bag tator tots
1 can cream of mushroom
1 can cream of chicken
1 can green beans, drained
1 can corn, drained
1 can nacho cheese soup
Layer the tator tots on the bottom of a 9x13 pan. Brown the hamburger and onions. Put over tots. Top with veggies. Mix
cream soups and spread over veggies. Spread cheese soup over top. Bake at 350 for 45 minutes.

Ham and Cheese Casserole
1 lb. ground ham or sliced ham chopped up
1/2 egg noodles, cooked drained and rinsed
1/2 lb. Velveeta
4 T flour
4 T margarine
2 c. milk
1 1/2 T yellow mustard
1 1/2 t horseradish
Mix flour, margarine, and milk in a sauce pan. Melt margarine. Add cheese. Melt cheese being careful not to scorch. Add
mustard, horseradish, noodles, and ham. Bake 325 for 1 hour.
